Sant'Ansovino is a wine that perfectly balances richness and structure with a refreshing lightness, making it an exceptional choice for wine lovers who appreciate both depth and elegance. The grapes are harvested at a medium-late ripening stage to ensure optimal flavor and balance. The fermentation process uses only natural, wild yeasts, and the two grape varieties are vinified separately in Slavonian oak barrels. After fermentation and separate aging, the two are expertly blended for a harmonious final wine.
During fermentation, manual "punching down" of the skins is performed to enhance tannin extraction and maintain a controlled maceration time. The result is a wine that ages beautifully, retaining its robust structure while offering a lighter, more approachable profile with just the right amount of concentration.
