Valpolicella Ripasso, a historic gem in Valpolicella's winemaking heritage, is gaining increasing recognition and admiration among wine enthusiasts. Our "Carlo Meroni" Valpolicella Ripasso DOC Classico Superiore 2019, introduced from the 2018 harvest and available from 2023, embodies this beloved tradition with a modern touch.
Valpolicella Superiore undergoes a unique "Ripasso" vinification method, where it is re-fermented in the winter months on the rich pomace of Amarone and Recioto, infusing it with dried grape sweetness and robust body. This secondary fermentation lasts approximately 15 days, imparting a fine alcoholic note and great elegance.
The wine then ages for about 30 months in 20-25 hl Slavonian oak barrels, followed by bottle aging to achieve its full potential. The result is a wine that marries the structure of Valpolicella Superiore with the enveloping richness of Amarone.
