First vintage produced 2012, vineyard with northern exposure, vinified completely without added sulfites. Before modern sparkling wine technology existed, Prosecco was crafted using an ancient method. The wine was bottled with its natural yeasts and left to rest in home cellars. Over time, a natural refermentation process transformed residual sugars into delicate, lively bubbles, creating a naturally sparkling wine. This process left the yeasts at the bottom of the bottle, giving rise to the name “Col Fondo” (Sur-lie). At Malibran, they are reviving this time-honored tradition, bringing you Prosecco just as it was enjoyed centuries ago—pure, unfiltered, and full of character. You have two ways to enjoy the Credamora:

The Classic Pour: Let the bottle rest upright for a few days to allow the yeasts to settle. When serving, carefully pour the wine into a carafe, leaving the sediment behind for a crisp, clean taste.

The Full Experience (Our Favorite!): Gently shake the bottle before serving to rediscover the true essence of Prosecco. By blending the fine yeasts back into the wine, you’ll unlock its rich aromas, fresh complexity, and the enchanting story of a past that lives on in every sip.
